What does a flavor sensory chemist do?

As a part of the R&D team, Victor assists in the identification of new hop varieties that have novel flavors. Most of his time is spent running the sensory program and providing sensory feedback to the product development team. Victor got his Masters at Oregon State University studying hop chemistry and sensory analysis in Tom Shellhammer’s lab.

Every year the Hop Breeding Company develops 10,000 new hop varieties. After agronomic, brewing, and sensory screening only 5-10 hops will advance to commercial consideration. Early in his career, Victor did sensory analysis on soap brands Dove, Axe, and Suave. Victor is glad he now does sensory analysis on hops and beer.
